Pumpkin Pie Waffles

This is a great one if fats are low because it eliminates the whole egg and subs with egg whites. Pumpkin will give waffles the moisture that would normally come from eggs. All quantities can be adjusted on this on to fit your macros; this is a great macro cap meal.

  • 1 oz oat flour

  • 1.5 oz pumpkin puree
  • 1 whole egg (can sub with egg whites)
  • 1 scoop nuethix chocolate/vanilla protein powder
  • 2-3 oz almond milk
  • Cinnamon and nutmeg to season
  1. Whisk all ingredients together, add almond milk slowly at end until reaches desired batter consistency
  2. Pour into waffle maker or into pan for pancakes (can add extra egg whites to thin batter for crepes too)
  3. Serve plain, with sugar free syrup, nut butter, add berries on top, low fat cottage cheese
