Protein Packed Pasta Bake

Non dairy eaters: You can sub Trader Joe’s almond mozzarella shreds as well.
  • 1 Box BANZA chickpea pasta (Walmart and most groceries carry)

  • 8 oz 96% ground beef
  • 1 Small onion, chopped
  • 4 oz Low fat ricotta
  • 6 oz Pizza sauce (Walmart great value brand is 25 cal for ¼ cup)
  • 2 oz shredded fat free mozzarella
  • 2oz shredded mozzarella
  1. Preheat oven to 350 deg
  2. Boil water and cook pasta 3 minutes less than what box calls for
  3. Add water to frying pan and add onion, cook until water evaporates
  4. Add ground beef to onions and brown
  5. Rinse paste then drain very well! I will even pat dry with paper towels
  6. Mix sauce, pasta, meat mixture, ½ of shredded cheeses in bowl. Add spices; I used italian seasoning, crushed red pepper, and salt
  7. Layer ½ of pasta mixture in loaf pan, add thin slices/scoops of ricotta on top, repeat with other half of pasta mixture and other half of ricotta
  8. Add rest of cheese to top
  9. Bake covered for ten minutes then uncover and broil on low until cheese is bubbly and brown
