Potato Pancake
Great recipe for macro counting. Tailor it to whatever your goal is! All ingredients can be adjusted to fit your plan.
Ingredients
- Shredded frozen potatoes
- Liquid egg whites (or whole eggs if you have fats)
- Trader Joe’s almond mozzarella style shreds (or cheese, if fats/dairy agree with you)
- Veggies — I used leftover smoked onions and mushrooms
- Deli ham
- Everything But the Bagel seasoning
Directions
- Combine all ingredients in bowl and mix well
- Add to preheated, lightly greased pan
- Press down into pancake and cover
- When bottom starts to brown, flip and cook other side
- Top with light sour cream, Greek yogurt, applesauce, or eat as is!
