Potato Pancake

Great recipe for macro counting. Tailor it to whatever your goal is! All ingredients can be adjusted to fit your plan.
Potato Pancake
Ingredients
  • Shredded frozen potatoes
  • Liquid egg whites (or whole eggs if you have fats)
  • Trader Joe’s almond mozzarella style shreds (or cheese, if fats/dairy agree with you)
  • Veggies — I used leftover smoked onions and mushrooms
  • Deli ham
  • Everything But the Bagel seasoning
Directions
  • Combine all ingredients in bowl and mix well
  • Add to preheated, lightly greased pan
  • Press down into pancake and cover
  • When bottom starts to brown, flip and cook other side
  • Top with light sour cream, Greek yogurt, applesauce, or eat as is!
