Jen’s Blueberry Muffins

Make the power of blueberries work for you with these mini muffins that are perfect for on-the-go snacks.
  • 1.5 oz Oat Flour

  • 30g Blueberries
  • 1 Egg
  • ½ scoop nuethix chocolate/vanilla protein powder
  • ¼ tsp baking powder
  • 3-4 oz unsweetened almond milk or water
  1. Preheat oven to 350

  2. Combine all ingredients, except blueberries
  3. Pour into mini silicone muffin molds
  4. Add blueberries and push down slightly
  5. Bake 15 minutes or until toothpick comes out clean
  6. Makes about 10 mini muffins
