Ang’s Zuppa Toscana

Ang’s Zuppa Toscana
  • 1 large onion
  • 2 cups sliced mushrooms
  • 2 cloves garlic
  • 8 oz Jenny O Italian turkey sausage
  • 1lb chicken breast
  • 6 cups chicken broth
  • 16 oz (3 medium) potatoes
  • ½ cup half and half
  1. Sautee diced onion over medium heat until soft

  2. Add mushrooms and cook until soft
  3. Add garlic, cook 1 min
  4. Add ground sausage and cook until brown
  5. Add diced chicken and cook until no longer pink on outside
  6. Add chicken broth and potatoes, bring to boil then reduce and simmer until potatoes start to soften (10-15mins)
  7. Add kale and simmer until soft
  8. Remove from heat, stir in half and half
