Jen’s Blueberry Muffins
Make the power of blueberries work for you with these mini muffins that are perfect for on-the-go snacks.

Ingredients
- 1.5 oz Oat Flour
- 30g Blueberries
- 1 Egg
- ½ scoop nuethix chocolate/vanilla protein powder
- ¼ tsp baking powder
- 3-4 oz unsweetened almond milk or water
Directions
- Preheat oven to 350
- Combine all ingredients, except blueberries
- Pour into mini silicone muffin molds
- Add blueberries and push down slightly
- Bake 15 minutes or until toothpick comes out clean
- Makes about 10 mini muffins
