Fried Zucchini

  • 2 medium zucchini, sliced about 1/2 in thick
  • 3 oz bread crumbs
  • 60g parmesan cheese
  • Pepper and Italian seasoning to taste
  • 1 whole egg
  • 1 egg white
  • 10g olive oil cooking spray
  1. Preheat oven to 400 deg
  2. Slice zucchini then lay out on paper towel that has salt on bottom, salt top of zucchini as well
  3. Cover zucchini with paper towel so there are at least two layers top and bottom
  4. Set something heavy, I used a cookie sheet with a caste iron pan, on top of paper towels
  5. Let zucchini sit for min 10 mins to let salt draw out excess water, pat dry REALLY WELL after! This is how you get the crisp
  6. Bowl 1- egg/egg white mix
  7. Bowl 2- breadcrumbs, parm, seasonings
  8. Start an assembly line dipping zucchini into egg mix first, breadcrumbs second.  I used every last drop for 2 whole zucchinis
  9. Lay zucchini on a lightly greased cookie sheet (I used one with a silicone liner to prevent sticking) **to weigh oil on pan set cookie on scale, tare scale, spray 5g on bottom of pan
  10. Add another 5g of cooking spray to top of zucchini; weigh same way as bottom layer
  11. Put in oven for 10-15 mins or until tops are golden brown
  12. Reheat in air fryer to use leftovers and keep the crisp!
