Black Bean Pasta Salad

A very adjustable and fresh meal with all of your favorite gyro ingredients!

  • 1 bag Trader Joe’s organic black bean pasta
  • 12 oz chopped tomato
  • 1 cucumber, diced
  • 1 red onion, diced
  • 2 red bell peppers, diced
  • 40ml olive oil
  • 40ml white vinegar
  • 40ml red wine vinegar
  • 1 tbl garlic salt
  • 1 tbl onion powder
  • 2 tbl oregano
  • 1 tsp black pepper
  • 1 tsp dried basil
  • 1 tbl dried parsley
  • 1/4 tsp celery salt

Cook pasta according to “al dente” bag instructions, rinse well with cold water once cooked
While pasta is cooking chop up your veggies and add all ingredients to a large mixing bowl
Add pasta and combine all ingredients

Make it a meal
  1. For my personal needs this falls a bit short on protein so I added diced chicken breast to bump it up
