Becky’s Twist on Skinny Taste Chicken Tostadas
These tostadas can be served on a tostada shell, over rice, shredded lettuce, etc. Recipe compliments of @broncosgirl0528.

Ingredients

¼ cup shredded cheddar cheese
- ½ cup reduced fat shredded mexican blend cheese
- ½ cup mashed avocado
- 1 medium lime
- 1 cup chopped tomato
- ¼ cup chopped white onion
- 2 Tbl chopped cilantro
- 12 oz chicken breast, cubed and grilled
- ⅓ cup canned black beans, drained
- 1 jalapeno sliced
- 2 Tbl sliced black olives
- salt and pepper
Directions
- Combine cheese in small bowl
- Combine avocado, juice from half of lime, and pinch of salt
- In third bowl combine tomatoes, onion, cilantro, rest of lime juice, salt and pepper to taste
- Assemble by layering chicken, beans, cheese. Broil until cheese melted then top with avocado, tomato salsa, jalapeno, and black olives
