Becky’s Twist on Skinny Taste Chicken Tostadas

These tostadas can be served on a tostada shell, over rice, shredded lettuce, etc. Recipe compliments of @broncosgirl0528.
  • ¼ cup shredded cheddar cheese

  • ½ cup reduced fat shredded mexican blend cheese
  • ½ cup mashed avocado
  • 1 medium lime
  • 1 cup chopped tomato
  • ¼ cup chopped white onion
  • 2 Tbl chopped cilantro
  • 12 oz chicken breast, cubed and grilled
  • ⅓ cup canned black beans, drained
  • 1 jalapeno sliced
  • 2 Tbl sliced black olives
  • salt and pepper
  1. Combine cheese in small bowl
  2. Combine avocado, juice from half of lime, and pinch of salt
  3. In third bowl combine tomatoes, onion, cilantro, rest of lime juice, salt and pepper to taste
  4. Assemble by layering chicken, beans, cheese. Broil until cheese melted then top with avocado, tomato salsa, jalapeno, and black olives
