Ang’s Zuppa Toscana

Ingredients
- 1 large onion
- 2 cups sliced mushrooms
- 2 cloves garlic
- 8 oz Jenny O Italian turkey sausage
- 1lb chicken breast
- 6 cups chicken broth
- 16 oz (3 medium) potatoes
- ½ cup half and half
Directions
- Sautee diced onion over medium heat until soft
- Add mushrooms and cook until soft
- Add garlic, cook 1 min
- Add ground sausage and cook until brown
- Add diced chicken and cook until no longer pink on outside
- Add chicken broth and potatoes, bring to boil then reduce and simmer until potatoes start to soften (10-15mins)
- Add kale and simmer until soft
- Remove from heat, stir in half and half
